Memories of Mum at Home

Living in a small village in England due to and RAF posting, thoughts of Scotland and home were very special. The thoughts centred around my parents and their love for me and my children.

Baking, cooking meals and sitting round the table were a huge part of my lovely mum’s life. My four children loved her and the cake boxes in the kitchen cupboard were one of their treats. All sorts of goodies, beautifully made.

Thank you Mum for happy memories. Home made rhapsody jam was featured in this!

Farola packet – semolina is coarser but can be used too

2oz (28g) Sugar – caster for meringue is better

1 egg

Milk – as recipe on packet.

Make basic pudding as directed on the box of Farola but add egg yolk only to cold milk. Cook as directed. Leave to cool slightly

Meringue – whip egg white to peaks, add sugar slowly.

Assemble: butter the edge of a pyrex dish (easier to clean!). Put the pudding mix in the dish, add 3 large spoons of jam of your choice, top with meringue and brown in a medium oven (about 180 degrees) – enjoy!
